In a medium sauce pan, combine rice, water, sugar and cinnamon stick and bring to a boil. Reduce heat, cover and simmer 20 minutes. Discard cinnamon stick.
Combine milk, egg yolks and dulce de leche and stir into rice. Simmer over low heat 20 minutes, stirring occasionally, until thick and creamy. Serve warm topped with whipped cream, almonds, and cinnamon, if desired.
Alternatively, top with chocolate shards, fresh fruit or other nuts if desired.
While they are different products, caramel or cajeta can be used in place of dulce de leche.

A popular Latin American confection, Dulce De Leche is prepared with a slow process of heating milk and sugar. The result is a spreadable caramelized sauce with a toffee-like flavor that is used for the fillings of many desserts, or drizzled on top of other sweets.
You can buy Dulce De Leche pre-made in grocery stores, or spend the time to make your own how you like it. At its simplest form, this sauce is done by simmering milk and sugar together, but you have the freedom to add in vanilla extract, adjust the amount of sugar or use an alternative milk. Additionally, adding a small amount of baking soda will help percent the milk from coagulating, giving you a more consistent texture.
Simply replace the milk with coconut cream, coconut milk and a small pinch of salt. Simmer for only about 20 minutes and keep an eye on it so that it doesn’t boil over!
