Instructions

  1. Barbecue Spice Rub: Stir together chili powder, brown sugar, salt, pepper, paprika, smoked paprika, garlic powder, coriander and cayenne; set aside.

  2. Vegan Veggie Burgers: Prepare rice according to package directions; let cool completely. Heat 1 tbsp canola oil in small skillet set over medium heat; cook onion and garlic for 3 to 5 minutes or until tender. Let cool completely.

  3. In food processor, pulse walnuts until finely ground. Add onion mixture, 1 cup black beans, bread crumbs, barbecue sauce, flax and 2 tbsp spice rub; pulse until combined. Transfer to bowl; add rice and remaining beans, mixing to combine. Divide into 6 portions. Shape into six 1/2-inch thick patties. Place on parchment paper­–lined tray and refrigerate for 30 to 60 minutes or until firm.
  4. Preheat grill to medium heat; grease grate well. Brush patties with remaining canola oil; grill for 3 to 5 minutes per side or until grill-marked. Top each patty with Cheddar cheese slice; grill for about 1 minute or until cheese starts to melt. Grill buns for 30 to 60 seconds or until lightly toasted.
  5. Stir together mayonnaise, olive oil, mustard and garlic; spread over bottom halves of buns. Assemble burgers, arugula, avocado, tomato, red onion slices and pickles in buns.
