  1. Cook rice according to package directions.
  2. Preheat boiler.
  3. In a medium bowl, whisk egg yolks until light and lemon-colored. Blend in sweetened condensed milk. Add lime juice and mix well. Stir in cooked rice.
  4. In another bowl, beat egg whites with cream of tartar until foamy. Continue beating, adding sugar 1 tablespoon at a time, until stiff peaks form. Fold 6 tablespoons of meringue into filling mixture. Pour into pie shell. Decorate top with remaining meringue and brown under boiler. Chill 3 hours, or until set.

Recipe Variations

While this dish is incredibly delicious as is, there are a few variations you can make to add your own personalized touch. First, if you don’t have sushi rice, a risotto rice substitute or our Sweet Sticky Dessert Rice will work as well. The medium grains of Arborio Rice or short grain dessert rice will work in place of sushi rice as they will all cook up to a more compact and creamy texture. Just ensure that you use cooked rice.
