  1. Prepare rice according to package directions.
  2. Coat a large skillet with non-stick cooking spray and heat over medium heat. Sauté chicken until lightly browned.
  3. Add zucchini, tomatoes, salt, pepper and oregano.
  4. Cover, reduce heat, and simmer 10 minutes or until chicken is cooked through and zucchini is tender.
  5. Stir in parsley and green onions. Serve over rice.
  6. Pairing Suggestion: If you are preparing a large meal for a get-together, balance out the taste and texture by pairing with a cold pearl couscous salad recipe.

Ingredient Variations

Zucchini can be substituted with another summer squash or vegetable of choice.

Make this a Meatless Monday meal by substituting the chicken breast for tofu, tempeh or pre cooked beans of choice.
