Prepare rice according to package directions. Stir in water, evaporated milk, 1 1/2 tbsp brown sugar, vanilla and pinch of cinnamon; keep warm and set aside.
Meanwhile, heat oil in large skillet set over medium heat. Arrange bananas in skillet; sprinkle with remaining brown sugar and cinnamon. Cook for 3 to 5 minutes or until bananas are golden brown and sugar is caramelized. Add raisins; cook for 2 to 3 minutes or until raisins are softened.
Serve caramelized bananas and raisins with warm sticky rice. Garnish with pecans and orange zest.
