Ingredients

Instructions

  1. Heat water and broth in 2-quart saucepan over medium heat until it comes to a simmer. Reduce heat to low and keep warm.
  2. Meanwhile, melt 2 tablespoons butter in large saucepan over medium heat; add asparagus and cook until tender crisp. Remove asparagus; set aside.
  3. In same saucepan, cook onion in remaining 1 tablespoon butter until soft. Add rice and stir 2 to 3 minutes. Add wine; stir until absorbed. Increase heat to medium-high; stir in 1 cup water-broth mixture. Cook uncovered, stirring frequently, until liquid is absorbed. Continue stirring and adding remaining water-broth mixture 1 cup at a time, allowing each cup to be absorbed before adding another.
  4. Cook until rice is tender and mixture has a creamy consistency, approximately 25 to 30 minutes. Stir in asparagus, cream, cheese, salt and pepper.
  5. Stir until mixture is creamy, about 2 to 3 minutes. Serve immediately.

Is Risotto a Pasta or Rice?

Risotto is a creamy, hearty rice dish cooked with short-grain Italian Arborio rice cultivated in the Piemonte area of Northern Italy. The rice is starchy enough on its own to thicken and make its own sauce.

What is usually in risotto?

Classic risotto typically includes rice as its main ingredient, along with a small quantity of sautéed onion or shallot in butter, dry white wine, hot stock, vegetables or mushrooms, and various aromatic ingredients.

What is the best way to cook and eat asparagus?

After chopping the asparagus spears into 1-inch pieces, boil them in water for around 1 minute or until they become tender but remain bright green. Then, use a slotted spoon to transfer the blanched asparagus to a bowl of ice water and let it cool for approximately 1 minute. After that, drain the asparagus, pat it dry, and add it to salads or pastas, or simply squeeze some lemon over it and relish!
