  1. Prepare orzo according to package directions. Allow orzo to cool to room temperature.

  2. In a large bowl, add the orzo, cucumbers, cherry tomatoes, black olives, and red onion.

  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, and salt and pepper. Add to the orzo and vegetables, and toss.

  4. Cover bowl and place in the refrigerator to chill. Once chilled, top with the feta cheese and serve.
