Instructions

  1. Rice: Heat oil in a saucepan set over medium heat; cook onion and garlic for 3 to 5 minutes or until slightly softened. Stir in rice, tomato paste, chili powder, cumin, oregano, salt, and pepper. Stir in broth; bring to boil. Stir in beans. Reduce heat to low; cover and cook for 15 to 20 minutes or until liquid is absorbed and rice is tender. Cover and let stand for 10 minutes. Fluff with fork. Stir in cilantro.

  2. Pico de Gallo: Toss together tomatoes, onion, jalapeño, cilantro, lime juice, and salt. Let stand for 5 minutes.

  3. Assembly: Divide rice mixture among 4 bowls. Top with Pico de Gallo, eggs, avocado, tortilla matchsticks, queso fresco, and jalapeños. Add chia over avocado as garnish, if desired.

  4. Tips: Add chorizo sausage, bacon or ham to breakfast bowl if desired.

Hearty Egg Breakfast

Huevos Rancheros, or ranch-style eggs, is a hearty and filling breakfast, traditionally made with tortillas, eggs, salsa and other vegetables. Our version turns this classic Mexican dish into an elevated rice bowl layered with flavor in every bite.

Starting with the base, we’ve used Texmati® White Rice (as featured above), which is an American grown, unique hybrid grain featuring a captivating aroma (many liken the smell to freshly popped popcorn), fluffy texture, and welcoming nutty flavor. The rice base is combined with pinto beans and simmered with broth, lots of spices and veggies garnished with fresh cilantro.

After the rice and beans base is ready, prepare your homemade pico de gallo and assemble with your favorite ingredients. Use our suggested topping ideas, or get creative and incorporate your favorite flavors to complement the spicy salsa, rice blend and eggs. A few alternatives include lettuce, sour cream, or another type of cheese such as Oaxaca, Monterrey Jack, Cotija or feta.
