  1. In large saucepan, bring 8 cups salted water to boil. Stir in rice; boil for 4 minutes. Drain well in colander; set aside. Soak saffron threads in 1/3 cup boiling water; set aside.
  2. In small skillet, melt 2 tbsp butter over medium heat; cook onions for 8 to 10 minutes or until tender and lightly golden brown. Stir in salt, pepper, cumin, coriander, cardamom, cinnamon, allspice and fennel; cook for 1 to 2 minutes or until fragrant. Stir in apricots, raisins and goji berries.
  3. Melt remaining butter in heavy-bottomed enamel or nonstick Dutch oven set over medium heat. Spread half of the rice over bottom of saucepan. Layer onion and fruit mixture, then remaining rice, over top; cook, uncovered, for 4 to 6 minutes or until rice starts to brown (you can't see the rice browning but it should smell nutty and fragrant.) Do not stir or move rice to ensure a crispy crust forms on the bottom.

  4. Drizzle saffron and soaking liquid evenly over rice. Scatter orange zest over top. Cover and reduce heat to lowest setting; cook for 20 to 25 minutes. Turn off heat; cover and let stand for 10 minutes.
  5. Using spatula, carefully lift bottom crust of rice and invert onto platter, crispy side up. Sprinkle with almonds, pistachios and pine nuts. Garnish with pomegranate seeds and parsley.
