  1. In a blender, combine rice, cinnamon sticks, and 2 cups of water; blend until rice and cinnamon sticks break apart. Add remaining 2 cups of water and let rice mixture stand at room temperature overnight.
  2. Strain the rice water into a pitcher and discard rice. Stir the milk, vanilla, and sugar into the rice water. Chill and stir before serving over ice.
  3. Add a sprinkle of cinnamon on top, if desired.

In Spain, they make it with tiger nuts that are soaked, ground up, and sweetened. In Latin America and other parts of the Americas, they use jicaro, melon, sesame seeds or white rice, along with some spices. You can have it hot or cold. It's also used as a flavor in other drinks like frappé coffee.
